Sweet potatoes contain vitamins B6, C,D, iron, potassium, magnesium and beta carotene. They are high in fiber and their natural sugars are slowly introduced into the blood stream.
Ingredients
- 8 cups cubed sweet potatoes
- 1/3 cup olive oil
- 4 drops lemon essential oil
- 2 drops rosemary essential oil
- sea salt
- crushed rosemary leaves
Directions
- Add essential oil to the olive oil, mix.
- Pour the olive oil over the sweet potatoes in a large bar pan.
- Toss and evenly coat the sweet potatoes with the oil.
- Sprinkle with sea salt and rosemary leaves.
- Bake in a preheated 350 degree oven until tender, about 20 minutes depending on the size of the potato chunks.
