STUFFED PEPPERS With CELERY ROOT MASH TOPPING
3 organic peppers cut lengthwise and seeded (I used orange peppers)
1 organic chopped onion
1 cup finely chopped organic celery
1/2# fresh organic spinach
1/4 cup organic nutritional yeast (anthonysgoods.com or Amazon)
2 cups Kite Hill ricotta (I buy this at Whole Foods)
1/2 cup organic raw sprouted pumpkin seeds (GoRaw at Thrive Market, iHerb, Vitacost or Amazon)
Sea Salt to taste
Preheat oven 350 on roast or bake
Put olive oil in a large frying pan. Add chopped onion. Cook on low caramelizing the onion. Add the celery and garlic. Sauté a bit longer. Add fresh spinach, cover and allow it to cook down. Remove from heat. Add Kite Hill ricotta, nutritional yeast and the pumpkin seeds. Mix it all up. Now you will need to fill the pepper halves. Place them in an oblong baking dish. Cover lightly with parchment paper, bake or roast for 60 minutes, more or less until tender.
CELERY ROOT MASH
8 cups, 1 inch cubed organic celery root (3-4 celery roots. They are all different sizes)
3 tbs dried chives
4 tbs Nutiva vegan ghee or butter flavored coconut oil (Thrives Market brand or Nutiva found on Thrive Market, iHerb, Vitacost or Amazon)
3/4 cup Kite Hill sour cream (Whole Foods)
Salt to taste
Peel and cut celery root into 1” cubes. Put in a pot, cover the celery root with water and boil until tender. (Like mash potatoes)
Drain, and put in the vitamix or food processor.
Add the rest of the ingredients and process until mashed like potatoes.
Add a big dollop on top of the pepper before serving.
ALMOND FLOUR AND CAULIFLOWER FOCACCIA
Pre heat oven to 350°
1 box Simple Mills Almond Flour Pizza Dough
2 tbs. Organic apple cider vinegar
2 tablespoons organic olive oil
1/3 cup water (if needed 2 tablespoons extra water)
Butter, flavored coconut oil. For forming the dough ball.
Simple, follow the directions on the box. I mixed finely cut up fresh rosemary when forming the dough. I pat it out on a pampered chef bar pan. It did not fill the whole pan. Maybe about 1 1/2” around the pan was left open.
Pre-bake the crust for 20 minutes. (I obviously didn’t follow directions, it was too soft on the bottom for me. Please, judge your personal dough)
**The Topping
I picked what I had in my garden. Cherry tomatoes, plum tomatoes, zebra tomatoes, peppers, green onion. I cut it all up sprinkled it with olive oil, sea salt, and garlic powder.
Apply the topping evenly all over the crust. Sprinkle on organic nutritional yeast for a cheesy taste. Bake in the oven another 20 minutes.
Topped off with pieces of fresh arugula and Cream of Balsamic Vinegar.
BREAKFAST BANANA CHIA PUDDING PARFAIT
Chia Parfait
1 1/2 cups organic almond milk
1/2 cup coconut cream
1 tbs Simply Organic vanilla (simplyorganic.com)
1 organic banana
2 tbs organic coconut sugar
2 tbs organic maple sugar
2 tsp cinnamon
1 cup chia seeds
1 box Simple Mills Almond Flour Toasted Pecan Cookies (Thrive Market or Whole Foods)
Put all ingredients into a mixing bowl and beat with hand mixer a couple minutes or use an immersion blender.
Let sit for 10 minutes. Mix again. Refrigerate over night.
To build the parfait you will need
Almond Flour Cookies
Banana slices
In a glass of your choice crumble the cookie on the bottom, place thin slices of banana, layer on the chia pudding. Repeat until glass is full of goodness. Keep refrigerated.
3 BEAN SALAD
3 BEAN SALAD
1 - 13.4 ounce carton organic cannellini beans (all beans were from Thrive Market)
1 - 13.4 ounce carton organic black beans
1 - 13.4 ounce carton organic garbanzo beans
1/2 cup chopped organic celery
1 cup chopped organic fennel bulb
1/2 cup chopped organic onion
THE DRESSING
1 tablespoon chopped organic fennel sprigs
1/4 cup Meyer lemon honey vinegar (Amazon)
1 teaspoon organic lemon flavor (Simply Organic. Vitacost, iHerb, Amazon)
1/4 cup organic olive oil (I used Thrive Market brand)
1 chopped organic garlic clove
1 teaspoon pink Himalayan sea salt
2 tablespoons raw honey
Put all ingredients in a blender to mix well.
Put all the chopped ingredients and the 3 different beans in a bowl that has a tight lid. Mix in the salad dressing. Put the lid on the bowl so you can turn it upside down and upright a few times to distribute the salad dressing with the beans. Refrigerate a few hours, turning the bowl upside down and upright, for flavor and dressing distribution. For the most flavor keep it in the fridge overnight.
PUMFU EGG SALAD with AVOCADO and ARUGULA
1/2 tsp Organic garlic granules
2 tsp Organic dried chives
1/4 cup Organic finely chopped celery
2 tbs. Organic finely chopped shallot
3 tbs. Mayo ( Follow Your Heart Grape seed oil veganaise)
2 tbs Kite Hill yogurt
1/2 tsp Himalayan sea salt
1 tsp Raw Honey
1 tbs melted Organic vegan butter
1 tbs Yellow Organic mustard
Organic avocado
SIETE Almond Flour Tortillas (Whole Foods, Costco)
In a bowl break up the Pumfu. I used my fingers. Add all the rest of the ingredients (EXCEPT avocado and tortillas)and mix well.
Heat up tortilla on low broil. Slice the avocado and put some slices in with the Pumfu and some Arugula. Fill it up and eat.
CHEEZY BROCCOLI PIE
CRUST
• One package 8.8 ounce organic delicately steamed brown rice (Simple Truth Organic. Vita Cost)
• 1/2 cup chopped organic onion
• 1 organic clove of garlic chopped
• 2 tablespoons organic vegan butter (Nutiva or Thrive Market butter flavored)
• 2 tablespoon organic three seeds (Better Body Foods. Amazon)
• 1/4 cup Organic vegeta ble broth (Bonafide. Thrive Market or Amazon)
CRUST DIRECTIONS
In a skillet melt the vegan butter. Add your chopped onion and chopped garlic and cook for a short while until soft.
Add the brown rice, three seeds, salt to taste. Put in the vegetable broth. Allow this to cook until the rice is softened.
Place the rice mixture in a 9 inch pie pan. (I used Pampered Chef)
BROCCOLI FILLING
- 2 tablespoons melted organic vegan butter (see above)
- 1/2 cup organic chopped onion
- 1 organic chopped garlic clove
- 2 tablespoons of three seeds (see above)
- 1/4 cup organic nutritional yeast (Shiloh Farms. Vitacost)
- 2 tablespoons organic dried chives
- One cup vegan sour cream (Kite Hill. Thrive Market, Amazon)
- 18. 5 ounce package of organic rice broccoli (Thrive Market)
- 1 – 10 ounce package of organic frozen broccoli, thawed (Cascadian Farm. Thrive Market)
- 1 cup non dairy cheddar (Good Planet Foods Cheddar Style Olive Oil Cheese Shreds. Amazon or Whole Foods)
DIRECTIONS
Preheat oven to 350° on bake
In a skillet melt the vegan butter. Add the chopped onion and garlic and cook until soft. Add the package of the riced broccoli, the dried chives, the nutritional yeast, the 2 tablespoons of the three seeds and mix together. Add the thawed out package of broccoli, sour cream and the vegan cheddar cheese. Mix that all together. Pour the mixture on top of the rice crust.
Bake in the oven for 45 minutes.

Inflammation
Inflammation is the body’s immune response to promote healing. We need this to heal, but too much over too long of time is damaging to our bodies. The Amazing Gong Bath
At the beginning of time the first sound of the universe was Om. This is the song of the gong. The vibration of sound effects one on a cellular level. The gong bath is used to reduce stress, heal, allow for meditation and to find spirituality. The gong is one of the most effective instruments we can use for sound healing. The gong bath may open up chakras and release blocked energy for a healthy mind and body.
A gong bath is a form of sound therapy. An internal body massage is experienced as sound waves pass through the body. The body, being composed mostly of water, accepts the sound in a therapeutic way as the song of the gong cause cells to reverberate. This is how the gong brings balance to the physical and spiritual of our being.

Top 10 Essential Oils to treat Sinusitis
